Hey there! I hope ya’ll had a good week and are gearing up for an epic weekend. When you get back to work on Monday it will be February! That much closer to Summer and warm weather.
Well, I missed listing my faves last Friday, but I am back this week…here are my five Friday faves.
Zoodles (zucchini noodles) have become a weekly occurrence for me, if not twice a week. They are simple, fast, and delicious. Plus you can have them so many different ways. My favorite right now however is sweet tomatoes with extra virgin olive oil, garlic, and red pepper flakes (lots). Toss it around in a pan and you are done! I usually will have quinoa and maybe half an avocado on the side. Unbelievably satisfying.
2. Cooking with my Best Friend
So, last weekend I took another trip up north to visit Nikki in Appleton. We had plans to do a snowshoe hike Saturday night, but since I got my boot put on that plan had to be tossed out. Bummer. Since I was pretty much immobile, we did so much cooking. All whole foods, all plant based. We steamed a bunch of different vegetables and a sweet potato on Friday since I wanted something quick and easy after driving. Saturday we made green smoothies for breakfast, tomato basil soup with hummus and sprouted grain flax bread for lunch, and then veggie sushi for dinner.
Even though Nikki and I live 3 hours from each other I feel like I see her all the time. And I am so glad we have kept our bond strong since fifth grade!
3. Superbowl Sunday / MSU v. UofM Basketball Game
It is a huge weekend for sports. Of course I am excited for the Superbowl and all the drama surrounding the deflated footballs. I’m rooting for the Seahawks.
Michigan State plays U of M Sunday as well, at 1 PM. This is a big game, always, for obvious reasons. #gogreen
And yes, I used to be a part of the IZZONE and that is me and my friend Doug on ESPN2. Wish I could be there this weekend!
And the finals matches for the Australian Open will be on at the crack of dawn, Saturday morning and Sunday morning, I think. I am planning to watch Serena’s match against Sharapova at 2:30AM. Djokovic and Murray will play for the men.

5. The Power of Now by Eckhart Tolle
I chose to listen to this book because Tolle narrates it. I finished it this morning and although there is an overall powerful message, I couldn’t help but notice how repetitive the message was. Sometimes he would discuss the same thing over and over again. Don’t get me wrong though, I have learned a lot and I am practicing what he discusses on a daily basis.
If you are interested in deepening your spiritual practice and living in the now, it is a highly praised book and a must read.
